Description:
This wine is made from the best grapes grown in five of the most prestigious Grands Cru: Avize, Chouilly, Oger, Cramant and Aÿ.
Alcoholic fermentation takes place in stainless steel vats under temperature control between 16 and 20oC for one part and in barrels for the other part. Malolactic fermentation is done.
The champagne is aged for 5 years on the yeast in the crayères, where the temperature stays between 10 and 11°C.
