Description:
Only first pressings are used from a low-pressure, membrane press. Gravity fed from press to tanks. Fermentation at 18°C for 14 days. Racking and malolactic fermentation immediately thereafter. The wine lies on the lees for six years. The liqueur de dosage is matured in oak barrels.
This wine is rich and intense, with hints of white peach, quince and spicy bread.
