Description:
The Val des Demoiselles is a small plot planted with Pinot Noir. Traditional vinification “par macération” (the “saignée” method) is used to obtain to the highest concentration of red fruit aromas. The concentration is so strong that the cuvée is lightened by adding a proportion of Pinot vinified in white.
On the nose, the rosé reveals itself with notes of red fruits and violets. Thanks to a prise de mousse at a low temperature, an effervescence of fine lace reveals flavours of citrus fruits and pepper.
