Description:
The juice from first pressings, at low pressure on a membrane press, is gravity-fed to the tanks. Fermentation takes place over 14 days at 18ºC. Racking and malolactic fermentation take place immediately. Fining takes place at low temperatures in the winter (5º to 8ºC). The wine then lies on the lees for two to three years in the cellars at cellar temperature (11ºC).
Luminous and transparent in colour with an extremely fine mousse. The wine is flowery and fresh with an elegant nose. Vanilla, hazelnut and lemon on the palate progress to a mineral and delicate finish.
